Raw Mango Tacos w/ Chili Mango Salsa

Ingredients:

Tacos

1 ripe mango- peeled, pitted & sliced- $0.42

1 tomato- diced -$0.42

1/2 zucchini - sliced into small rectangles - $0.50

1/8 of a bunch of cilantro chopped- $0.15

1/2 carrot- chopped into small cubes- $0.10

1/2 red onion-diced - $1.00

1/2 bag of 12 corn tortilla- $1.15

Salt & Pepper to taste.

Salsa

1 ripe mango- peeled, pitted & sliced- $0.42

1 lime- juiced - $1.00

1/4 cup orange juice - $0.21

1/8 of a bunch of cilantro chopped- $0.15

2 tsp cumin

1 tbsp dried chili flakes

** 1-3 diced jalapenos or choice of hot sauce salt & pepper to taste

Instructions:

Tacos

  1. Combine all ingredients in a bowl
  2. Drizzle with Mango dressing (recipe below)
  3. Sprinkle with S&P
  4. Warm up tortilla on frying pan or microwave
  5. Garnish with your choice of dressings: guacamole, hot sauce, sour cream, salsa, etc.

note: I added a jalapeno sauce to give the dressing more kick. The brand I used is local to Costa Rica so you could easily just substitute the sauce with 1-3 diced jalapenos (depending how hot you'd like)

Instructions:

Salsa

  1. Add mango,lime juice, chili flakes, cumin, & orange juice to blender
  2. Blend adding more water until you achieve your desired consistency ( I chose to keep it on the thicker side)
  3. Add in chopped cilantro, s&p and additional chili flakes or jalapenos.
  4. Serve & Enjoy!
