4 Step Chickpea & Avocado Salad

Ingredients:

1 16 oz can of chickpeas : $2.00
1 tomato chopped: -0.35
1/4 cucumber chopped :-0.10
1 tbsp chopped white onion-0.05
1/2 avocado diced or sliced -0.35

1/2 lime -0.05
drizzle olive oil 1-2 tbsp
1 tsp fresh cilantro chopped -0.05
salt & pepper to taste

Is that not the biggest avocado you've ever seen?

Instructions:

  1. Combine chickpeas, tomatoes, onion & cucumber in bowl.
  2. Squeeze lime juice, drizzle with olive oil, sprinkle with salt & pepper. Toss & taste. Adjust cilantro, s&p and olive oil to taste.
  3. Garnish with cilantro & avocado.
  4. Serve & Enjoy!!
